Wild Rice has an elongated, fine, dark-coloured grain, a crunchy texture, a characteristic hazelnut flavour and a peculiar black tea aroma. Wild rice is low in sodium and high in the amino acids lysine and methionine, and rich in fibre, zinc, phosphorus, magnesium, iron, potassium, copper and B vitamins (B1-thiamine, B2-riboflavin, B3-niacin and B9-folic acid).
The protein content is 14%, so wild rice is considered a very nutritious food and advisable in the diet of the elderly, young people and children.
