Description
The Verdina Lentil of Lanzarote, also called Lenteja Estón, is small in size, less than 5 mm in diameter, light green in colour with some darker shades. These dried pulses are particularly rich in fibre, iron and protein.
The Lanzarote Lentil or Verdina Lentil is quick-cooking and does not need to be soaked. The Lanzarote Lentil is widely used in vegetable salads and as a garnish among other vegetable stews.
It stands out for its resistance to cooking, preventing it from peeling.
