The Caparron bean has a purple bean with a predominant purple colour over white, which is shared half and half. The Round Caparron bean is also known as the dog bean, Rioja caparron, bishop’s bean and is sometimes called the Mandilin bean because of the purple pattern it bears, which resembles an apron.

It is one of the lesser-known beans, but highly appreciated by those who have enjoyed its flavour, which is very different from other beans. It is generally eaten locally and is the star of a typical dish in Burgos and La Rioja called ‘Olla podrida’. The ‘caparrón de Belorado’, ‘caparrón de La Rioja’, ‘caparrones de León’ and ‘caparrón de Vega de Tirón’ are famous.
