Description
The Caparron bean has a predominantly purple bean over white, which is shared half and half. The Caparron long bean is one of the lesser known beans, but very much appreciated by those who have enjoyed its flavour, which is very different from other beans.
It is generally consumed locally and is the main ingredient of a typical dish in Burgos and La Rioja called ‘Olla podrida’ (rotten pot). The ‘caparrón de Belorado’, ‘caparrón de La Rioja’, ‘caparrones de León’ and ‘caparrón de Vega de Tirón’ are famous.
