Sweet Corn Arepas

Ingredients:

  • 100 gr Corn Flour
  • 50 gr of Warm Water
  • 50 gr of Warm Milk
  • 40 gr of Fresh Cheese
  • Salt
  • Sugar

Preparation:

  1. Heat the water and the milk in the same container, without boiling.
  2. Dissolve the salt and sugar in the mixture.
  3. In a separate bowl put the corn flour and add the liquid little by little while kneading.
  4. We mix until we obtain a homogeneous dough without lumps (if it was too liquid we would add a little more flour and if it was not very malleable we would add more liquid).
  5. Add the cheese in cubes until it is mixed with the dough.
  6. We make uniform balls.
  7. Flatten with the hand to obtain a disk shape.
  8. Put a frying pan over medium heat and brown the arepas for 6 to 8 minutes on each side.
  9. Open in half and fill to your liking.
  10. Remember that depending on the cheese we will get a more or less salty dough, keep this in mind and do it to your own liking.

Vegan Buckwheat Pancakes

Ingredients (2pax):

  • 2 Cups of Buckwheat
  • 2,5 Cups Animal Milk, Vegetable Milk or Water
  • 1 Tbsp Olive Oil
  • Pinch of Himalayan Pink Salt
  • 80 gr Coconut Sugar
  • 50 gr Hazelnut
  • 50 gr Dried Apricots 
  • Ground Cinnamon 
  • 1 Cup of Water

Preparation:

  1. Soak the wheat in plenty of water for at least 2 hours.
  2. Drain and clean under the faucet with abundant water to clean possible impurities.
  3. Put the wheat together with the other ingredients in a mixing glass and grind it for about 5 minutes until it has no lumps.
  4. We put a frying pan to heat, we add a part of fat so that it does not stick.
  5. Add a pot and prepare it like any other crepe.
  6. Heat a pot with the water and the sugar and let it boil for 10 minutes, until you get a syrup.
  7. Chop the dried apricots and hazelnuts.
  8. Add the dried apricots and hazelnuts together with the cinnamon to the syrup and stir until it has the desired consistency.

Buckwheat Pita Bread

Ingredients :

  • Sprouted Buckwheat
  • Salt
  • Pepper
  • Parsley
  • Celery
  • Walnuts
  • EVOO
  • Spices to your liking

Preparation:

  1. In a food processor or blender cup place the sprouted buckwheat with the rest of the finely chopped ingredients and season with salt, pepper and a drizzle of olive oil.
  2. Mash leaving bits of whole buckwheat for extra crunch.
  3. You can dehydrate and keep the enzymes alive or bake at 100 degrees until the desired texture is achieved.
  4. For baking place a vegetable paper on a baking dish and spread the dough obtained, so that it is approximately 2 cm thick and square and then cut into equal portions or thinner and leave it craker type.

Buckwheat Essene Bread

Ingredients :

  • 250 gr Sprouted Buckwheat 
  • 1 Pinch of Salt
  • Pepper to your liking
  • Parsley 
  • Celery
  • Walnuts 
  • EVOO
  • Spices to your liking

Preparation:

  1. In a food processor or blender, place the buckwheat sprouts with the rest of the finely chopped ingredients and season with salt, pepper and a drizzle of olive oil.
  2. Mash, leaving bits of whole buckwheat for extra crunch.
  3. You can either dehydrate and keep the enzymes alive or bake at 100 degrees until the desired texture is achieved.
  4. For baking, place a piece of parchment paper on a baking dish and roll out the dough so that it is approximately 2 cm thick and square and then cut into equal portions or thinner and leave it as a craker.
